Can you verify that a 4080FE will fit in this case?

Yes, the NUC 13 Extreme can fit up to a triple-slot 12" graphics card in its PCIe 5.0 x16 slot such as the NVIDIA GeForce RTX 4080 FE.

I run 128Gb DDR4 ram, would this be a downgrade as it only supports 64Gb?

If you need 128GB of RAM for your workflow, yes, the limit on the Intel NUC 13 Extreme Kit (Barebone, US Power Cord) is 64GB so that could hinder performance as far as RAM capacity is concerned.

Is the CPU replaceble? For example I choose the i5 model for now. Can I later in the future replace it with i9 CPU on my own?

The Intel NUC 13 Extreme Kit (Barebone, US Power Cord) BH #INRNUC13RNI5 has a Intel Z690 chipset and a LGA 1700 CPU socket.

Can I run Windows Server on this NUC?

The Intel NUC 13 Extreme Kit (Barebone, US Power Cord) BH #INRNUC13RNI7 does not support Windows Server.

Are all of the M.2 slots active when a PCIe graphics card is installed?

The Compute Element has two visible PCIe connectors, a x4 and a x16 that are supplied by the CPU and two more PCIe x4 circuits provided by the Z690 PCH. The CPUs PCIe 5.0 x 16 is dedicated to the GPU, while the PCIe 4.0 x4 is dedicated to a single M.2 slot. The PCH provides two PCIe 4.0 x4 M.2 drive slots. All run at full speed.

In addition to the 3 m.2 slots, can I use internal 2.5" SSDs at the same time? If so, how many?

The Intel NUC 13 Extreme does not have any internal SATA drive connections.
